I won't have the biggest collection by a long shot, but I do have the most memorable ones here. Final Fantasy 7 has one of the biggest fan fic libraries out there. Fans loved the idea of finishing the story, expanding the world and backgrounds of the characters, and most of all giving the cast new adventures. Some people would start a trend, such as Dark Nation speaking Spanish in a comparison to the Taco Bell chihuahua or Cid loving The Dukes of Hazzard and it would end up in several different comedy fics.
There are still some sites that exist that have a ton of fics archived. Fanfiction.net boasts the biggest libary (40.9k!!), but there are some dead sites that you can still access if you're looking for something not archived. Most of the fics in Icy Brian's Fan Fic Section are still readable as well as some bits from Rocket Town:ShinRa No. 26 and Jen's Everything Page.
Without further adieu, here is what I have collected. Stories have been spell checked to avoid embarrassment. Mostly everything is either a .pdf or a .zip file for ease of reading. The first few fics have dedicated sections or websites due to their content and amount of chapters.
